Pasta with Pistachio Pesto, Burrata, and Caramelized Radicchio

With this weather, I just want to enjoy a cozy meal on the couch with my friends! And what am I making for them? Comfort food!


  • 30 gr. pistachio nuts
  • 40 gr. Parmesan cheese (plus a little extra for serving)
  • 30 gr. basil
  • 1 clove of garlic
  • 6 tbsp. olive oil
  • 3 tbsp. water
  • Salt and pepper
  • 250 gr. radicchio or other bitter leafy greens
  • 1 tbsp. balsamic vinegar
  • 1 tbsp. honey
  • 150-200 gr. pasta (whole wheat rigatoni)
  • 1 burrata
  • Parmesan cheese


  1. Blend the first 6 ingredients in a food processor or pestle and mortar until you have a coarse pesto.
  2. Meanwhile, bring a pot of salted water to the boil.
  3. Coarsely chop the radicchio into strips. Heat a skillet with a splash of olive oil and sauté the radicchio for a few minutes. Deglaze with balsamic vinegar and honey and let it caramelize for an additional 2 minutes.
  4. Cook the pasta according to the package instructions.
  5. Add the pasta, pistachio pesto, and a splash of the pasta cooking water to the skillet with radicchio, and mix everything well.
  6. Divide the mixture onto two plates, top it with burrata, some extra Parmesan cheese, and black pepper, then serve!
