Pasta with Pistachio Pesto, Burrata, and Caramelized Radicchio

With this weather, I just want to enjoy a cozy meal on the couch with my friends! And what am I making for them? Comfort food!
INGREDIENTS
- 30 gr. pistachio nuts
- 40 gr. Parmesan cheese (plus a little extra for serving)
- 30 gr. basil
- 1 clove of garlic
- 6 tbsp. olive oil
- 3 tbsp. water
- Salt and pepper
- 250 gr. radicchio or other bitter leafy greens
- 1 tbsp. balsamic vinegar
- 1 tbsp. honey
- 150-200 gr. pasta (whole wheat rigatoni)
- 1 burrata
- Parmesan cheese
PREPARATION
- Blend the first 6 ingredients in a food processor or pestle and mortar until you have a coarse pesto.
- Meanwhile, bring a pot of salted water to the boil.
- Coarsely chop the radicchio into strips. Heat a skillet with a splash of olive oil and sauté the radicchio for a few minutes. Deglaze with balsamic vinegar and honey and let it caramelize for an additional 2 minutes.
- Cook the pasta according to the package instructions.
- Add the pasta, pistachio pesto, and a splash of the pasta cooking water to the skillet with radicchio, and mix everything well.
- Divide the mixture onto two plates, top it with burrata, some extra Parmesan cheese, and black pepper, then serve!
