Quick healthy lunch salad with coriander-jalapeño dressing and feta cheese

INGREDIENTS

  • 1 cucumber
  • 2 pointed red peppers
  • 250 gr. good quality cherry tomatoes
  • 1 avocado
  • 2 spring onions
  • 1 tin of black beans
  • Feta

Dressing

  • 30 gr. coriander
  • 5 pickled jalapeños
  • 1 lime
  • 1/2 tsp. honey
  • 4 tbsp. extra virgin olive oil
  • 2 tbsp. water
  • Salt and pepper

PREPARATION

  1. Dice the cucumber, pointed red pepper and avocado, quarter the tomatoes and cut the spring onion into wafer-thin rings and add to a large bowl.
  2. Rinse the black beans, drain well and add to the bowl along with a generous pinch of salt and pepper and mix everything together.
  3. Add all dressing ingredients to a hand blender and blend into a smooth dressing, mix through the salad.
  4. Finish with some crumbled feta and serve!
