Quick healthy lunch salad with coriander-jalapeño dressing and feta cheese

INGREDIENTS
- 1 cucumber
- 2 pointed red peppers
- 250 gr. good quality cherry tomatoes
- 1 avocado
- 2 spring onions
- 1 tin of black beans
- Feta
Dressing
- 30 gr. coriander
- 5 pickled jalapeños
- 1 lime
- 1/2 tsp. honey
- 4 tbsp. extra virgin olive oil
- 2 tbsp. water
- Salt and pepper
PREPARATION
- Dice the cucumber, pointed red pepper and avocado, quarter the tomatoes and cut the spring onion into wafer-thin rings and add to a large bowl.
- Rinse the black beans, drain well and add to the bowl along with a generous pinch of salt and pepper and mix everything together.
- Add all dressing ingredients to a hand blender and blend into a smooth dressing, mix through the salad.
- Finish with some crumbled feta and serve!
