Mackerel salad sandwich

This will become your new favourite lunch sandwich, trust me! Tip: The mackerel salad is also delicious on toast with drinks or to make a salad with it.

INGREDIENTS

  • 190 gr. warm-smoked mackerel (2 fillets)
  • 1 spring onion
  • 1 to 2 gherkins
  • 1 tbsp. capers
  • 1 tbsp. cottage cheese
  • 1 lemon (rasp and juice)
  • 1 tbsp. horseradish
  • 15 gr. dill
  • (Little gem) lettuce
  • Tomato
  • Cucumber
  • Sourdough bread

PREPARATION

  1. Blend the cottage cheese until smooth and creamy in a small food processor.
  2. Finely chop the spring onion, capers, gherkin, dill and mackerel and blend together with the cottage cheese, the zest of one lemon and a squeeze of juice and a generous pinch of pepper.
  3. Heat a frying pan and grease two slices of sourdough bread with olive oil and fry until both sides are crispy and golden brown.
  4. Slice the tomato and cucumber.
  5. Top the sourdough bread with the little gem lettuce, mackerel salad, cucumber and tomato and serve!
