Italian Radicchio Salad

The tastiest (Christmas) side dish!
INGREDIENTS
- One head of radicchio (or half, depending on size)
- Large handful of green olives
- Handful of pine nuts
- Handful of parsley
- Handful of raisins
- Grated Parmesan cheese
- Lemon zest
Dressing:
- 1 tbsp. mayonnaise
- 1/2 tsp. sugar
- 1/2 lemon (juice)
- 1 tsp. mustard
- 2 tbsp. olive oil
- Salt and pepper
PREPARATION
- Soak the raisins in warm water for 10 minutes.
- Wash and dry the radicchio leaves and tear them into large pieces.
- Pit the olives and roughly chop/tear them.
- Toast the pine nuts for a few minutes in a dry skillet.
- Combine all the above ingredients on a platter along with the lemon zest, chopped parsley, and Parmesan.
- Mix all the ingredients for the dressing together and pour it over the salad. Serve immediately!
