Italian Radicchio Salad

Season :Winter Servings :2-4 as a side dich Diet :Vegetarian Time :10 minutes Difficulty :Easy

The tastiest (Christmas) side dish!

INGREDIENTS

  • One head of radicchio (or half, depending on size)
  • Large handful of green olives
  • Handful of pine nuts
  • Handful of parsley
  • Handful of raisins
  • Grated Parmesan cheese
  • Lemon zest

Dressing:

  • 1 tbsp. mayonnaise
  • 1/2 tsp. sugar
  • 1/2 lemon (juice)
  • 1 tsp. mustard
  • 2 tbsp. olive oil
  • Salt and pepper

PREPARATION

  1. Soak the raisins in warm water for 10 minutes.
  2. Wash and dry the radicchio leaves and tear them into large pieces.
  3. Pit the olives and roughly chop/tear them.
  4. Toast the pine nuts for a few minutes in a dry skillet.
  5. Combine all the above ingredients on a platter along with the lemon zest, chopped parsley, and Parmesan.
  6. Mix all the ingredients for the dressing together and pour it over the salad. Serve immediately!
