Grilled bimi with burrata and caramelized chili almonds

This side dish is quick to prepare and sooo delicious! The creamy burrata, crispy bimi, fresh dill and lemon, salty capers, and the sweet-spicy caramelized nuts are a match made in heaven.
INGREDIENTS
- 300 g bimi
- 1 to 2 tbsp capers
- 10 g dill
- Zest of half a lemon
- 30 g sliced almonds
- A squeeze of honey
- A pinch of chili flakes
- (Maldon) sea salt
- 2 burratas
PREPARATION
- Grill or fry the bimi in a splash of olive oil in a grill or frying pan with a pinch of salt and pepper until just tender.
- Tear the burratas open and spread them out on a flat dish. Grate the lemon zest over the top.
- Arrange the bimi over the burrata and drizzle with a bit of extra virgin olive oil. Roughly chop the dill and capers and sprinkle them over the bimi.
- Heat a frying pan and toast the sliced almonds until they turn a light golden-brown. Then add a pinch of sea salt, chili flakes, and a squeeze of honey, and mix well. Let the sliced almonds caramelize for about 30 seconds, then scoop them onto baking paper to cool slightly.
- Sprinkle the caramelized almonds over the bimi and serve!
