Flatbread with Chicken Kofta, Tzatziki, Lettuce, and Feta

Healthy, delicious, and easy to prepare in advance for when friends come over!

INGREDIENTS

  • 250 gr. ground chicken
  • 2 spring onions (finely chopped)
  • 10 gr. dill (finely chopped)
  • 1 garlic clove (grated)
  • 1 tsp. coriander powder
  • Pinch of cayenne pepper
  • Salt and pepper

Tzatziki:

  • 150 gr. Greek yogurt
  • 1/2 cucumber
  • 10 gr. mint (finely chopped)
  • Lemon juice and zest of 1/2 lemon
  • 1 tbsp. olive oil
  • Salt and pepper

Additional

  • 2-4 flatbreads
  • Romaine lettuce
  • Pickled peppers or jalapeños
  • Feta

PREPARATION

  1. Preheat the oven to 180C.
  2. Mix all the ingredients for the chicken kofta and shape them into elongated balls around a skewer.
  3. Heat a dash of olive oil in a skillet and cook the chicken kofta until fully cooked, turning them to brown on all sides over medium heat.
  4. Meanwhile, remove the seeds from the cucumber, grate it using a box grater, and squeeze out the excess moisture. Mix the cucumber with yogurt, mint, lemon juice, lemon zest, olive oil, salt, and pepper.
  5. Slice the romaine lettuce into strips and crumble the feta. Place all toppings in separate bowls.
  6. Briefly warm the flatbreads in the oven. Then, arrange all the ingredients on the table so that everyone can assemble their own flatbread.
