Baked potato board

My favorite combinations:

  • Sweet potato, chili sin carne, guacamole, sour cream, pico de gallo, pickled red onion, cilantro, cheddar
  • Floury potato, blue cheese dip, crispy bacon, pickled jalapeño, spring onion, dill

INGREDIENTS

  • 3 kg potatoes (a mix of sweet and regular potatoes)
  • 150 g smoked bacon slices, cooked and finely chopped
  • 150 g cheddar, grated
  • 2 tbsp pickled jalapeños
  • 1 container of chili con carne/pulled chicken/lentils in tomato sauce, etc.
  • 15 g cilantro
  • 15 g dill
  • 3 spring onions, thinly sliced
  • 1 red bell pepper, finely diced
  • 1 container of sour cream
  • Sriracha, chili sauce, etc.

Pickled red onion + Pico de Gallo + Red cabbage

  • 2 red onions, halved and sliced (pickled red onion)
  • 150 ml apple cider vinegar (pickled red onion)
  • 150 ml water (pickled red onion)
  • 2 tbsp granulated sugar (pickled red onion)
  • 1 tsp salt (pickled red onion)
  • 2 Roma tomatoes, finely diced (pico de gallo)
  • 1 small shallot, finely chopped (pico de gallo)
  • 1/2 red chili pepper, finely chopped (pico de gallo)
  • Juice of 1/2 lime (pico de gallo)
  • Handful of cilantro, chopped (pico de gallo)
  • Salt and pepper (pico de gallo)
  • 150 g shredded red cabbage (red cabbage)
  • Juice of 1 lime (red cabbage)
  • Pinch of salt (red cabbage)

Guacamole + Blue cheese dip

  • 2 avocados (guacamole)
  • Lime juice (guacamole)
  • Salt and pepper (guacamole)
  • 125 g sour cream (blue cheese dip)
  • 75 g blue cheese - e.g., Castello Blue (blue cheese dip)
  • 1 tsp apple cider vinegar (blue cheese dip)
  • 1 tsp Worcestershire sauce (blue cheese dip)

PREPARATION

  1. Preheat the oven to 180°C (350°F).
  2. Wash the potatoes, place them on a baking sheet, and drizzle with olive oil and salt.
  3. Bake for 1-1.5 hours, depending on their size, until tender.
  4. For the pickled red onion: Mix all ingredients together and refrigerate for at least an hour, preferably longer.
  5. For the pico de gallo: Mix together and place in a bowl.
  6. For the red cabbage: Mix together and place in a bowl.
  7. For the guacamole: Blend with an immersion blender or food processor and transfer to a bowl.
  8. For the blue cheese dip: Blend with an immersion blender or food processor and transfer to a bowl.
