Vega-ish Caesar Salad Grazing Board

This grazing board is healthy but also a great centerpiece for the table! I replaced the chicken with crispy chickpeas. Want a completely vegetarian board? Leave out the anchovies and replace them in the dressing with some capers!
INGREDIENTS
- 2 heads of little gem lettuce
- 1 jar of capers
- 1/2 baguette
- 2 sprigs of rosemary
- 1 clove garlic
- 1 can of chickpeas
- 1 tsp smoke paprika powder
- 200 g green asparagus tips
- Piece of Parmesan
- 200 g small tomatoes
- 200 g small cucumbers
- 2-3 eggs
- Optional: 1 can of anchovies
- Optional: Avocado
Dressing
- 3 tbsp yoghurt
- 1 tbso mayo
- 1/2 clove garlic
- 2 anchovy fillets or a handful of capers
- Handful of grated Parmesan
- 2 tsp Worcestershire sauce
- Squeeze of lemon juice
- 1 tbsp extra virgin olive oil
- 1 tsp mustard
- Pepper
PREPARATION
- Preheat the oven to 200°C (392°F). Rinse the chickpeas and dry them well with a paper towel. Spread them out on a baking tray lined with parchment paper, drizzle with olive oil, and mix with smoked paprika, salt, and pepper. Roast for about 30 minutes.
- Meanwhile, make the dressing by blending all the ingredients with a hand blender or in a food processor.
- Slice the baguette into thin lengthwise pieces. Rub with a garlic clove, drizzle with olive oil, add rosemary sprigs, and a pinch of coarse sea salt. Bake for about 10 minutes until golden and crispy.
- Boil the eggs for about 8 minutes, cool under cold water, peel, and cut in half.
- Sauté the asparagus tips in a hot pan with a splash of olive oil, salt, and pepper for 3-5 minutes.
- Now, assemble the board. Start by placing small bowls of crispy chickpeas, dressing, and capers on the board. Arrange the croutons diagonally between the bowls.
- Then, layer the ingredients from large to small. Start with the Parmesan, little gem (quartered lengthwise), anchovies, asparagus, eggs, cucumber (quartered lengthwise), small tomatoes, and optionally, avocado. Serve and enjoy!
