Spring crudités board

It’s wild garlic season again, so head to your local park to forage some! Then whip up this delicious wild garlic whipped feta dip for your crudités.

INGREDIENTS

  • Green asparagus tips
  • Watermelon radishes
  • Regular radishes
  • Baby carrots
  • Mini cucumbers
  • Romanesco
  • Mini bok choy or little gem
  • Celery

Whipped feta & wild garlic dip

  • 150g feta
  • 6 tbsp Greek yogurt (10% fat)
  • 15g dill
  • 1 handful of wild garlic + flowers (or 15g chives)
  • Squeeze of lemon juice + zest
  • Black pepper

PREPARATION

  1. Blanch the asparagus tips and romanesco for 10–30 seconds, then shock in ice water. Do the same with wild garlic, then squeeze out excess water (skip this if using chives).
  2. Blend dill, wild garlic, 2 tbsp yogurt, and lemon juice into a paste. Add feta, zest, and pepper, then pulse to a dip. Fold into the rest of the yogurt. Garnish with olive oil and garlic flowers.
  3. Place dip in the center of a board, surround with crudités, and serve.
