A little sneak peek from my cookbook Van de Plank—this insanely delicious bagel board! Perfect for a fun and cozy lunch with friends or family.
Tip - The ultimate bagel combos:
- Cream cheese, smoked salmon, cucumber, little gem, dill, and caperberries
- Mustard mayo, pastrami, and pickles
- Avocado, tomato, and pickled red onion
- Egg salad, little gem, and dill
INGREDIENTS
- 1 portion pickled red onion
- 1 portion egg salad
- 15 g chives
- 200 g cream cheese
- 200 g smoked salmon
- ±100 g capers (drained weight)
- 200 g pastrami
- 4 tbsp mustard mayo
- 10-15 bagels
- 1 avocado, sliced
- 500 g (colored) tomatoes, sliced
- 1 cucumber, sliced
- 1 small head of little gem, leaves separated
- 15 g fresh dill
- 120 g cornichons
Equipment
- Wooden board (35 x 65 cm)
- 4 small bowls
- 2 flat plates
PREPARATION
- Finely chop 5 g of chives. Mix with the cream cheese in a small bowl.
- Arrange the smoked salmon, caperberries, and pastrami on flat plates.
- Place the pickled red onion, egg salad, and mustard mayo in small bowls. Spread the plates and bowls across the board (see photo).
- Arrange the bagels in groups of 3-4 in three different spots on the board. Fill in the empty spaces with avocado slices, tomatoes, cucumber, little gem leaves, cornichons, dill, and the remaining chives.
